W-Hen My Honey Has Had A Rough Day....

....I make him roasted chicken.
Never cooked the same beast twice ~ sometimes with roasted root veggies, others with stuffing, some with 40 cloves of garlic, some with sage leaves under the skin.

Rarely follow a recipe, just throw together whatever happens to tickle my fancy.
There is one exception, the bird I cooked last night.

A recipe I turn to time and time again.

Ina Garten's Lemon Chicken with Croutons
recipe page is dog eared, stained and well loved.

I just could not improve on it if I tried.


Perfect meal to warm a loved one's heart and tired soul.

This is how my honey cheers me up.

We are one happy household today!

A couple tips:
Buy free range organic birds only.
Cut off as much fat as you can, or it can get reaaaal greasy.
A photograph of a roasted chicken will always end up looking like a cornish game hen no matter how big the bird.
The recipe can be found in 'Barefoot In Paris', which should be in your culinary library for sure.
I serve with a tart salad and some steamed veggies. Broccoli last night.

I think a roasted chicken is one of my go to comfort dinners. The aromas permeate the house; it's wonderful.
You are so very thoughtful to be aware of your Hubby's workday, and eager to prepare him something to eat that will raise his comfort level. Taking care of each other is a great thing in life. :)

Roasted chicken is wonderful comfort food. I've never tried Ina's recipe, but I trust your recommendation.

Love the roast chicken. It looks beautiful....last time I roasted a chicken my poor poodle, Buddy smelled the air for an hour and a half...finally..he got some.

We got what was's a big hit around here too....
