Never cooked the same beast twice ~ sometimes with roasted root veggies, others with stuffing, some with 40 cloves of garlic, some with sage leaves under the skin.
Rarely follow a recipe, just throw together whatever happens to tickle my fancy.
There is one exception, the bird I cooked last night.

recipe page is dog eared, stained and well loved.
I just could not improve on it if I tried.
Perfect meal to warm a loved one's heart and tired soul.

A couple tips:
Buy free range organic birds only.
Cut off as much fat as you can, or it can get reaaaal greasy.
A photograph of a roasted chicken will always end up looking like a cornish game hen no matter how big the bird.

I serve with a tart salad and some steamed veggies. Broccoli last night.
